In the Yan San Nightmarket, there's a stand that stands out among the others in this ghetto and old school westside nightmarket. If you drove by you probably would not give it a second glance, but this stand certainly provides a quality bowl of clear broth beef noodle soup and offers all you can drink soup. All of this for only 90 NT.

Side Note: Cheap Clear Broth Beef Noodle Soup in Taipei
Review
This is one of the more ghetto nightmarkets where only the very local people will eat at. They come here for the old Taipei taste and feel. Since my dad grew up in this neighborhood, the flavor, smell, and feel of this nightmarket really resonates with him, and he tries to eat here whenever he can get the chance to. Comparatively, this stand at least has some semi-indoor eating area with a few fans cooling the customers down. However, when its really hot...it can be very uncomfortable gulping down a bowl of hot beef broth. I would suggest paying a visit during the winter. The decor is a 2 due to a lack of air conditioning, but it is relatively clean and comfortable.
What beef noodle soup lovers can appreciate is this crystal clear broth that looks fairly bland, but is incredibly suffused with flavor. Do not mistakenly order the "normal beef noodle soup", but you have to order the original juice beef noodle soup (原汁牛肉麵). They claim to use only Taiwanese beef, which differ with American and Australian beef by their marbling. They claim that American and Australian beef are too fatty and would cause an overflow of juices into the broth. Taiwanese yellow cows are supposedly leaner and the fat would blend into the stock without causing excess cloudiness. They also refuse to use MSG, so each spoonful is refreshing. The noodles they use are my favorite Taiwanese style noodles (台式陽春麵) which are flat and semi thin, but carry a right snap to it if cooked right. I really recommend this bowl of beef noodle soup because it is delicious and cheap. I am not a fan of clear broth beef noodle soup, but this is one is acceptable to me. The greatest downside to this place is it's location. It is in a very inconvenient night market, which requires quite a walk from the MRT and parking is not that easy to find.
However, if one is adventurous enough why not expand your beef noodle soup palate by trying this one out.
