Review
In the Gong Guan Nightmarket, there is a pig intestine noodle stand that sells nothing but pig intestine noodle. For it to survive with just one item, that item must be pretty good, so I gave it a try. A small sized bowl sells for 25 NT and a large bowl sells for 40 NT, but the size of the small is comparable to the other stands that sell for around 40 NT. This stand has clean tables and condiments on each table for your personal seasoning needs. This is so far the best bowl of pig intestine noodle in the Gong Guan Nightmarket area.
I appreciate the 1:1 soup to noodle ratio, and a generous smount of intestine for only 25 NT. The places that charge 40 NT give about the same amount. They also have strings of fish cake blended into the bowl. One of the things that make this bowl stand out is the consistency of the soup. You may discover when trying out this dish at other places is that some stalls have bad control over their use of starch, so you end up getting a lot of gobbily goop in your soup. This stall finds the perfect ratio of soup to starch to make the soup thicken enough without turning into a snotlike state. The intestines taste very fresh, and were not covered in goop like at Dragon's. Another key factor that makes this bowl stand out is their noodles are thicker and more Q than the rest. You can feel the snap and tension with eat bite, which is very satisfying when paired with the flavorful soup. I feel that the flavor of the soup is also balanced just right. Yet, for those who disagree, the stall places the essential condiments out for you to adjust the flavor to your liking. I haven't tried all the pork intestine around the area yet, but it is definitely first out of four spots.
